Coconut Cream Pie Granola
I remember a few Thanksgivings ago, my grandmother was hunched over the mixer, whipping up her famous pumpkin pie filling. I had mentioned to her that I had never tried a coconut cream pie, and she said she would make me one as soon as she could...
I still have never had coconut cream pie.
In the meantime, while I wait for the real deal, I can just trick myself with this Coconut Cream Pie Granola. And I suggest you do too...
Coconut Cream Pie & Plum Flax Granola
1 cup rolled oats
1/3 cup flax seeds
1/3 cup slivered almonds
1/3 cup chopped dried plums
1/4 cup unsweetened shredded coconut
1/2 cup coconut oil- melted
1/4 cup raw honey
2 tsp. stevia
1 tsp. pink Himalayan salt
2 tsp. vanilla extract
Preheat the oven to 225º F. Mix all dry ingredients together (excluding stevia) in a medium.
Melt together the coconut oil, stevia, & vanilla in the microwave for 20 seconds. Whisk in the honey. Pour wet ingredients into the dry ingredients and fold until evenly coated.
Spread on a lightly greased baking sheet. Bake in oven for 1 hour 15 minutes, mixing around every 15 minutes. Once toasted and crisp, take out, add dried plums, and let cool completely (preferably in fridge) before shaking or scraping off pan. Store in a ziplock airtight bag or mason jar in a cool dry place.
