Eggnog Pancakes + Sparkly Maple Syrup
Merry Christmas!
Whether you celebrate the holiday or not, I hope everyone has an amazing day spent with family, friends, or loved ones. I want to keep this post short and sweet, since I’m sure if you’re looking for a recipe this Christmas morning, you’re wanting to get to the recipe and not scroll through my writing.
BUT, I will say that Christmas morning in my house is more about coffee, maybe some champagne and cocktails, and a few snack-y items. We never really have a full breakfast. Well, actually my mom does make some sort of breakfast every year that no one touches. It’s the thought that matters, though, right?
Anyway, this year is a little different. We usually open presents, head over to my grandparents on my dad’s side to open/give presents round two, say goodbye to all of our family there and head over to my mom’s side of the family in Arkansas for a few days. Unfortunately, this year, due to covid, we’re not able to have any family here or visit my mom’s side. While this is sad and all, the bright side of it is that my family and I will be able to have a slow, relaxing morning with each other without being rushed to get out of town — and we might even eat a real breakfast.
I can’t count on that, though, so we did our big brunch yesterday, and these Eggnog Pancakes were a part of it.
The best part about these pancakes, however, is the syrup on top of them. It’s not just any ordinary maple syrup. No, it’s sparkly maple syrup. I literally gasped when I first saw it. I found it at my favorite grocery store in Fayetteville — Ozark Natural Foods — right before Thanksgiving, and I haven’t used it yet because I’ve been saving it for this very moment… these very pancakes. I mean leave it to sparkly maple syrup to make up for all of the hard times in 2020. But seriously, if this doesn’t scream festive, I don’t know what does.
Unfortunately, I don’t have a recipe for sparkly maple syrup… but you can buy your own bottle here.
Now that it’s finally opened, I can’t wait to douse everything in liquid, edible sparkles. I’m definitely going to be channeling my inner Buddy the Elf over the next few weeks.
Onto these pancakes. I love eggnog, and I love pancakes, so I put them together to make these fluffy, sweet, golden pancakes seeping with nutmeg and real eggnog. Nuff said. Let’s get into the deets.
Eggnog Pancakes with Sparkly Maple Syrup
makes 15 pancakes
2 cups all-purpose flour
2 eggs, beaten
2 cups eggnog, I used the coconut eggnog by So Delicious
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
2 tsp. vanilla extract
1 tbs. packed brown sugar
1/2 tsp. salt
1 round tbs. baking powder
2 tbs. canola oil
Runamok’s Sparkly Maple Syrup, or syrup of your choice
In a large bowl, whisk together the dry ingredients. In a separate bowl, whisk together the liquid ingredients. Combine the liquid into the dry ingredients and whisk until just incorporated, don’t over-mix! Lightly grease and heat a griddle or skillet over medium-low heat. The trick is to cook them low and slow. Add 1/4 cup of the mix at a time and cook until bubbles form. Flip and cook until golden on each side.
Dust with more nutmeg and serve with maple syrup or toppings of your choice. You can keep them warm in an oven at 170ºF until ready to eat.
